Something you need to be concerned during the process to uninstall iTunes and Quicktime:

All music you bought from iTunes Store or imported from CD will be saved in your "My Music" folder by default. Uninstalling iTunes will not delete these music.
When you completely remove each component of them and get a prompt asking you whether to reboot your computer, click "no". Find and delete any sub-items regarding this component, if there is it.
Navigate to My Documents->My Music->iTunes, delete the file "iTunes Library.itl".
Do not try to delete Mobile Device Support folder in C:Program FilesCommon FilesApple, try to use Add/Remove Programs as mentioned.
